If you already love a good chocolate chip cookie, making them with brown butter is one of those small, practical upgrades that changes everything. Browning the butter adds a warm, nutty, almost toffeeโlike depth. The kind of flavor that feels a little oldโfashioned and a little elevated at the same time. - milk – replaces the moisture lost from browning butter
- milk chocolate chips – or semi sweet / chocolate chunks
- flour

It Starts By Making Brown Butter
Browning butter takes around 8 to 10 minutes over medium heat and is worth it. You will want to have this made and cooled before starting your cookie recipe (we made ours a day ahead). Browning the butter adds additional flavors to your cookies. Slightly nutty, and a hint of oh yes!
To make brown butter, melt your butter over medium heat. Stir to keep it from burning in your pan and let it keep cooking past the melting point. It will foam, then bubble (bubbling slows down), and then the milk solids at the bottom will turn golden brown, like maple syrup color (stir, stir) and smells toasty, nutty and warm. Thatโs your cue. Pull it off the heat right away so it doesnโt burn and let it cool.

How Much Butter Do I Need to Make Cookies?
Brown butter cooks off the water. You will lose about 25% of your butter volume when making brown butter, so start with more than you need. To make 1 cup of browned butter, brown 1 1/4 cups of butter. Let it cool before using. My preference is to put it in the fridge to harden. I then bring it out of the fridge the next day to use. It will be much softer than a stick of butter. Stir it to get all the brown bits incorporated into the butter evenly.
Do I Measure Browned Butter Before or After Browning?
You need to measure after the butter is browned. We still need the same volume amount. There will be a reduction in liquid, we will add milk/water to make up this difference, and keep the nutty brown butter flavor. Let the brown butter cool before using. Room temperature is fine.

Why Is My Cookie Dough Dry?
There could be a few reasons why the cookie dough is dry. Too much flour. Another reason that happened to me was I put the cookie dough balls in the refrigerator to cool and did not cover it well. The dough butter got harder and it was harder to shape. Covering the dough balls better would have helped.
Can I Use Salted Butter for my Chocolate Chip Cookies?
I prefer salted butter. I have reduced the amount of salt in my recipes to accommodate this. From what I understand salted versus unsalted butter is 1/4 teaspoon in salted butter. You can always top the cookies with a few flaky sea salt flakes if you want more.

How Do I Know The Cookies Are Done?
We bake this chocolate chip cookie recipe at 375F for 12-13 minutes. The cookies are slightly brown on the edges. Removing them immediately from the cookie sheet so they can cool and set up.
Are Brown Butter Cookies Worth The Effort?
According to my family, yes. I was told to update our favorite chocolate chip cookie recipe to this one. The came downstairs asking where the rest of the cookies were. They also have been talking for days about them after making them.

Tips and Tricks for Best Cookies
- Butter should be cooled before making cookies

- If your cookies spread, butter could be too warm and need to be chilled longer
- For additional richness, you can add an additional egg yolk

Soft Brown Butter Chocolate Chip Cookies

Ingredients
- 1 cup browned butter must be cooed
- 1 cup brown sugar
- 2 eggs room temperature
- 4 teaspoons milk
- 2 teaspoons vanilla
- 1 Tablespoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cup semi sweet chocolate chips can also use milk chocolate or chocolate chunks
- 3 cups flour
Instructions
- Beat your eggs and set aside.
- In a bowl add the butter and sugars and cream together until smooth. If using a mixer, have the mixer on a low speed. Get as smooth as possible.
- Add the beaten eggs and mix well.
- Mix in the cornstarch, baking soda, salt and vanilla. Scrap down the mixing bowl.
- Add in the chocolate chips.
- Pour in the flour one cup at a time until blended well. The batter should form together and begin to pull away from the bowl.
- Cover and then place the dough in a smaller bowl (so it fits) in the fridge and allow to chill for a few hours, firming up the butter.
- Remove the dough from the fridge and preheat the oven to 375โ.
- Get about 1 1/2 Tablespoons amount of dough and form into a ball.
- Place parchment paper down on the baking sheet and place the cookie dough down equal amounts apart (2 to 3 inches).
- Bake the cookies for 13 minutes.
- Remove from the baking sheet and onto a cooler surface. Repeat process to bake all cookies.
