Over mixing the batter. Once it’s mixed, stop.
Under filling the muffin tin will lead to small non-poofy tops of the muffins.
Forgetting to spray the muffin tin will lead to stuck muffins.
Overfilling the muffin tin will not give you that beautiful top on the muffin.
Under baking. Use a toothpick and make sure it comes out clean. Check a couple muffins to be sure.
