Homemade Cherry Muffins Recipe
Making food in a muffin tin is fun to me. Its snack bites of food. You can easily freeze and pull out what you need. This cherry muffin recipe takes delicious sweet or tart cherries and makes them into warm delicious cherry muffins.
If you take fresh cherries, pit and then freeze them, you can have fresh(ish) cherries all year round for delicious recipes.
Consider making a batch of these cherry muffins and freezing them to eat when you want. You could also make mini muffins (chop the cherries a little smaller) and have bite size snacks. And if you love all things cherry, you can make a pie, crumble or jam.
Ingredients:
1 cup frozen cherries, drained
2 cups flour
3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1 stick melted butter
1 cup milk
Topping
1/4 cup sugar & 1/2 teaspoon cinnamon mixed
Instructions:
Preheat oven to 400F.
Take the cherries and cut them into half.
In a bowl, add the flour, sugar and baking powder and mix. Add the cherries and mix until blended.
In a smaller bowl, beat the eggs and then add the milk and warm (not hot) melted butter and combine. Add into the dry ingredients mix and mix to blend.
Spray the muffin tin with oil or use cupcake papers.
Fill the each muffin cup about 3/4 full and sprinkle the tops with the cinnamon sugar.
Bake for 15 to 20 minutes, unless toothpick test is clean.
