Cinnamon Apple Muffin Recipe

Apple muffins are one favorite muffins. With Michigan apples out our back door, we have lots of apples we can grab fresh off the tree.  The local mills and stores also carry a great selection of baking apples allowing me to make this apple muffin recipe a lot.

What Ingredients Are Needed?

  • flour
  • baking powder
  • cinnamon
  • egg
  • sugar
  • melted butter, cooled
  • sour cream
  • small apples or canned apple pie filling

What Type of Apples Should I Use?

Be sure to use a cooking apples (soft apple) like the Granny Smith, Jonagold, Gala or Fuji.  This allows the apple to  soften while cooking. Cooking apples are great for pies as they cook quickly so you don’t have crunchy apples.

How Do I Make My Apple Muffins Moist?

The secret for a moist apple muffin (and this recipe) is sour cream. It adds the moisture to keep the muffins from drying out. There is a slight flavor of the sour cream, hidden by the flavors of the apples, cinnamon and sugars.

How Big Should the Apple Pieces Be?

The apple pieces should be cut to be about 1 inch in size. You want them to cook quickly in the muffins when baked. If you are using canned apples, you will want to cut them into smaller pieces and not keep them whole.

How Full Should the Cake Liners Be Filled?

You should fill the cake liners to the top of the muffin tin. For the best size and baking of the muffins, fill every other muffin whole. This will allow the muffins to bake without getting the muffin next to it mushed to it.

Warm Cinnamon Apple Muffins with Sour Cream

Cinnamon apple muffins are soft, moist, and filled with tender chunks of apple and warm cinnamon spice. The muffins are perfect for breakfast, snacking, or fall baking.

Ingredients

Muffin Batter

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 egg
  • 1/2 cup sugar
  • 1/2 cup melted butter, cooled
  • 1 1/4 cup sour cream

Apple Mix

  • 2-3 apples like granny smith, gala or fujis peeled, cored and chopped into 1/4-1/2 inch pieces. Or 2 cups homemade canned apple pie filling
  • 1 teaspoon butter
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

Apple Mix

  • Add 1 Tablespoon butter to pan and melt.
  • Add in peeled and cubed apple into mix and stir.
  • Pour in 1/2 cup brown sugar and a teaspoon of cinnamon and bring to boil. Set aside and let cool.

Muffin Batter

  • Preheat the oven to 350โ„‰
  • Spray the muffin tin with cooking spray or use cupcake papers
  • In a large bowl, add the flour, baking powder, sugar and cinnamon and mix.
  • Add the eggs, sour cream and butter into the dry ingredients and mix.
  • Add the cooled apple mix or canned apple filling and mix until incorporated.
  • Fill the muffin tins to the top. We fill every other cupcake holder for larger muffins.
  • Bake for 25-30 minutes or until golden brown and the toothpick comes out clean.
