Delicious Pumpkin Muffins
When pumpkin season rolls around, you will want to dust off this recipe and make pumpkin muffins. They are delicious and easy to make. Adding the pumpkin seeds on top is optional, but well worth it.
You can use pumpkin from a can or if you have canned your own pumpkin or baked a pumpkin, that works well too. The color of the muffins may may vary depending on which you use.
What Ingredients are Needed?
- flour
- baking powder
- pumpkin pie spice
- egg
- sugar
- softened butter
- pumpkin puree
- salted pumpkin seeds (and more to sprinkle on muffins)
- mini chocolate chips (optional)
Can I Use Canned Pumpkin Puree?
Yes. You can use canned or baked pumpkin puree. If you have canned your own pumpkin or have frozen pumpkin, you can also measure and use this for your muffins.
Can I Freeze Muffins?
After baking the muffins, allow them to cool completely. You can then place into a freezer save bag or freezer container. Make sure the label and date them, so you know what flavor they are.
How Can I Change The Flavors?
You can add chocolate chips, pumpkin seeds, white chocolate chips to the batter. Pop the muffins in the microwave for 15-20 seconds and enjoy them served warm.
Easy and Delicious Pumpkin Muffins
Ingredients
- 2 cups flour
- 1 Tablespoon baking powder
- 1 teaspoon pumpkin pie spice
- 1 egg
- 1 1/2 cup sugar
- 1/2 cup softened butter
- 1 cup pumpkin puree
- 1/2 cup salted pumpkin seeds and more to sprinkle on muffins
Instructions
- Preheat the oven to 350F degrees
- Spray the muffin tin with non-stick spray.
- In a large bowl, add the egg and whisk until the egg yolks turn a lighter yellow.
- Add the sugar and soft butter and mix.
- Add the pumpkin puree and mix well.
- Mix in the flour, baking powder and pumpkin pie spice, mixing well.
- Add the 1/2 cup of pumpkin seeds into the mix and stir until mixed.
- Fill the muffin tins to the top of the liners or top of the muffin tin.
- Sprinkled 5-6 (we really didn’t count it out) pumpkin seeds on top of the muffins and press the seeds lightly into the batter.
- Bake for 30 minutes or until golden brown and the toothpick comes out clean.
