Simple Homemade Chicken Stock

The taste of homemade chicken stock is amazing. It so much beter than store bought stock. And you know what’s in it. With using the Instant Pot, you can cook the chicken stock down in about 45 minutes. Making Instant pot chicken stock still has all the flavor, but with the busy person in mind.

And if you are making an Instant Pot Chicken for dinner. This is a great way to make chicken stock with leftover vegetable scraps if you have them too.

The chicken stock is dark, delicious and full of flavor.

What Ingredients Are Needed to Make Homemade Stock?

  • bones from cooked whole chicken carcass (we use rotisserie chickens)
  • carrot
  • celery
  • onion
  • water
  • bay leaf

How Do I Get Started?

Start on a day you have time. If easier for you, freeze the chicken bones. Make the stock on a day you have more time. If you have a raw chicken, you will want to bake the chicken and then pick the chicken carcass (removing the meat) and save the chicken bones for your stock.

Do I Need to Cook the Chicken Carcass First?

Do not cook the bones first. This is where your flavor is coming from. You will cook the bones in the Instant Pot to make the stock.

How Do I Separate the Stock from the Bones?

We use the strainer from the Instant Pot and then use a fine mesh strainer to strain the stock an additional time.

How Much Chicken Stock Does This Recipe Make?

This recipe makes 4 -5 pints of chicken stock. If you are not pressure canning the chicken stock, it should be stored in your fridge until you can use it.

High Pressure or Low Pressure for Chicken Stock?

Use high pressure for cooking your stock. Let the Instant Pot naturally release.

Why Do I Have a lot of Chicken Fat in My Stock?

When picking the chicken carcass pieces, all the skin and fat needs to be removed. If it is missed, you need to strain your stock with a pitcher like this. You will add the stock into the pitcher and let it sit so the fat settles to the top. You can then pour and discard the fat.

Can I Make Chicken Stock Without an Instant Pot?

Yes, you can. You would need a large pot, like a Dutch Oven pot. You would follow the same instructions, but instead of processing for 45 minutes, you will boil everything for several hours (4-6 hours). Then strain and follow the instructions to make the stock in the canner.

How Long Does Chicken Stock Take In Instant Pot?

You will need to cook the chicken bones for 45 minutes on high in the Instant Pot.

How Do I Store The Chicken Stock?

The chicken stock is not pressure canned. You need to let the stock cool. Once cooled it needs to be refrigerated until it is used. You can pressure can the stock and place in your pantry.

Fast and Flavorful Chicken Stock in the Instant Pot

Ingredients

  • 1 bones from one cooked rotisserie chicken
  • 8 cups water to cover bones
  • 1 rough chopped carrot
  • 1 rough chopped celery stick
  • 1 medium onion cut in half
  • 1 basil leaf

Instructions

Preparing Chicken in Oven

  • Place chicken on baking pan an cover in pepper.
  • Bake at 375โ„‰-400โ„‰ until internal temp is 165F.
  • Remove meat from the bones and make a nice dinner.

Cooking Chicken Bones in Instant Pot

  • Add the strainer insert into the Instant Pot.
  • Remove any fat from the chicken bones and remove skin.
  • Take the bones and place into Instant Pot.
  • Add carrot, celery and basil.
  • Cover the bones with water.
  • Close the Instant Pot.
  • Pressure cook the chicken for 45 minutes on high pressure, allowing natural release.
  • Remove the strainer basket (this should take most or all of the bones & veggies, set this to the side (and discard when cooled)
  • Strain the liquid from any solid pieces.
  • Pour into jars and place a lid on each jar, tightening secure.
  • Allow the liquid to cool so it can be placed into the fridge. Do not place hot jars into the fridge. Let them get to room temperature.
  • Store in the refrigerator.
  • If you want to store in your pantry, you need to pressure can the stock.
