Do you love blueberries?  While we wait for our little bushes to bear fruit, we pick blueberries from the local farmers.  We make muffins and this delicious blueberry French toast casserole recipe.  This is an overnight blueberry French toast casserole.  So you’ll need to prep a day ahead before you eat it.

Can I Use Frozen Blueberries for French Toast?

We recommend using frozen blueberries over fresh blueberries. This allows the blueberries to keep their shap and not become mushy. But if you prefer, use fresh.

Instead of using slices of bread, this recipe uses torn pieces of Italian bread to make it a casserole. You can also cube thick bread or your loaf of bread to make it casserole style.

Can I Make French Toast Casserole the Night Before?

This is the best way to make casserole. Allowing the egg mixture to soak into the bread over night If you cannot prepare overnight, allowing the bread mixture to sit for a few hours works (check to make sure the egg mixture has absorbed into the bread. Using dry bread also will help with absorbtion.

Blueberry French Toast Casserole

MUST MAKE – Delicious blueberry French toast casserole. Breakfast casseroles are not just for breakfast. Not to mention it's a one dish meal!

Ingredients

  • 6-8 inches of a loaf of French bread
  • 4 ounces half a brick cream cheese
  • 1 cup fresh or frozen blueberries
  • 6 eggs lightly beaten
  • 1 cup milk
  • 1/3 cup maple syrup
  • 1 teaspoon cinnamon

Instructions

  • In a bowl add the eggs and beat until mixed.
  • Add the milk, maple syrup, cinnamon and incorporate.
  • Pour the egg mix over theย  bread.
  • Cover with foil and place in the fridge overnight or at least for 8 hours.ย  You want the bread to soak up the egg mix.
  • When you want to bake, remove from the fridge and let sit 30 minutes before putting into the oven, longer if you are using a glass dish so it doesn’t break (it needs to be room temperature).
  • Preheat the oven to 350F.
  • Add the blueberries and dollops of cream cheese on top of the bread. Sprinkle more cinnamon on top if desired.
  • Bake for 30 minutes covered, then remove foil and bake for another 20-30 minutes until golden in color.
