Blueberry French Toast Casserole
Ingredients
- 6-8 inches of a loaf of French bread
- 4 ounces half a brick cream cheese
- 1 cup fresh or frozen blueberries
- 6 eggs lightly beaten
- 1 cup milk
- 1/3 cup maple syrup
- 1 teaspoon cinnamon
Instructions
- In a bowl add the eggs and beat until mixed.
- Add the milk, maple syrup, cinnamon and incorporate.
- Pour the egg mix over theย bread.
- Cover with foil and place in the fridge overnight or at least for 8 hours.ย You want the bread to soak up the egg mix.
- When you want to bake, remove from the fridge and let sit 30 minutes before putting into the oven, longer if you are using a glass dish so it doesn’t break (it needs to be room temperature).
- Preheat the oven to 350F.
- Add the blueberries and dollops of cream cheese on top of the bread. Sprinkle more cinnamon on top if desired.
- Bake for 30 minutes covered, then remove foil and bake for another 20-30 minutes until golden in color.
