Blueberry French Toast Casserole
Do you love blueberries? While we wait for our little bushes to bear fruit, we pick blueberries from the local farmers. We make muffins and this delicious blueberry French toast casserole recipe. This is an overnight blueberry French toast casserole. So you’ll need to prep a day ahead before you eat it.
What Ingredients Are Needed?

6-8 inches of a loaf of French bread
4 ounces (half a brick) cream cheese
1 cup fresh or frozen blueberries
6 large eggs, lightly beaten
1 cups milk
1/3 cup maple syrup
1 teaspoon cinnamon
8×8 square pan
Instructions
Spray the pan with cooking spray.
Pull french bread into about 1-2 inch pieces and place into the baking pan.
Cube the cream cheese and place on top of the bread.
Take the blueberries and spread on top of the bread and cream cheese. Looking yummy isn’t it?

In a bowl add the eggs and beat until mixed. Add the milk, maple syrup, cinnamon and incorporate.
Pour the egg mix over the bread.
Cover with foil and place in the fridge overnight or at least for 8 hours. You want the bread to soak up the egg mix.
When you want to bake, remove from the fridge and let sit 30 minutes before putting into the oven.
Preheat the oven to 350F. Bake for 30 minutes covered, then remove foil and bake for another 20-30 minutes until golden in color.
