Zucchini Mock Apple Pie

Ever feel that you have zucchini coming out of your ears and you are tired of making bread? You need to try making an apple pie using zucchini. It is a delicious mock apple pie.

  • sugar
  • brown sugar

  • flour
  • salt

Zucchini Apple Pie (Mock Apple Pie)

Ingredients

  • 8 cups zucchini, sliced, peeled and seeded
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons cream of tartar
  • 2 Tablespoons flour
  • 1/2 teaspoon salt
  • 1 Tablespoon butter
  • 2 pie crusts
  • 1 beaten egg
  • water to fill dutch oven with zucchini inside

Instructions

  • Peel the zucchini and remove the skins, cutting off both ends of the veg as well.
  • Cut the zucchini in half long ways.
  • Using your ice cream scoop (or a spoon) remove the seeds.
  • Slice into 1 1/4" slices. They should resemble apple slices (if you wish), but similar in size.
  • Place the sliced zucchini in the dutch over and fill with water until just over the Zucchini.
  • Bring to a boil. Once the zucchini is translucent in color, remove from heat and drain
  • Place the zucchini on paper towel or a clean towel and remove excess water. Let it sit for about 5 minutes.
  • Preheat your oven to 425โ„‰
  • In a bowl, add the cinnamon, sugars, cream of tartar and flour.
  • Add the drained zucchini into the bowl and mix making sure it's completely coated.
  • Take your pie crust and form it intot he pie pan.
  • Place the sugar mix and zucchini into the pie crust.
  • Place the pat of butter on top of the pie.
  • Roll out the second pie crust and place over the zucchini mix.
  • Crimp the edges together and cut vent holes or decorate fancy, as you wish.
  • Brush the egg wash over the crust. You can sprinkle white sugar over if you wish
  • Place the pie onto the baking sheet and into the oven.
  • Bake for 15 minutes at 425โ„‰.
  • After 15 minutes, reduce heat to 350โ„‰ and bake for 45 minutes.
  • Keep an eye on the crust and if it starts to get too brown, use a pie crust shield for the edges. (or you can put foil around the edges as well.
  • Remove and let the pie sit to cool. It is best to slice when the pie has cooled.

What Is a Mock Apple Pie?

A mock apple pie is where you use something else to make an apple pie in place of apple. This recipe is zucchini apple pie. Mock apple pies are also made uinge ritz crackers. Because zucchini does not have a lot of flavor, adding spices can trick the taste buds to believe it’s an apple pie. Not to mention use the zucchini slices you have in the freezer.

How do I Make Zucchini Taste Like Apple Pie?

This is done by how the zucchini is prepared. The zucchini is peeled, seeds are removed and then sliced similar to shape of apples. The zucchini is boiled and then spices are used to season similar to apple pie. Since zucchini has little or no flavor, the seasonings provide the flavor minimicing apple pie.

What is the Best Way to Slice Zucchini?

The zucchini should be washed, peeled to remove the skin. Cut lengthwise and and remove seeds. It will be in a C shape, hollowed out. Cut into 1/4 inch slices. They will ‘look’ like apple slices.

Will Zucchini Become Watery When I Bake It?

Zucchini is very watery. After it is cut, the slices are boiled until translucent, then removed from the water and patted dry. This helps remove any excess water and is a crucial step in your mock apple pie not being watery for baking.

What is the Best Way to Remove Seeds From the Zucchini?

My secret to removing seeds from zucchini, watermelon, canteloupe, pumpkin (and anything with seeds) is simple. Use an ice cream scoop. It easily glides through the melons and scoops out the seeds. Feed the seeds to your chickens or wash and dry to plant next year in your garden.

Do I Shred Zucchini For This Recipe?

No need to shred like you do for zucchini bread, this recipe uses 1 1/4″ slices of zucchini.

Can I Use Frozen Zucchini?

While frozen can be used, it will need to thaw, and then, subsequently, be boiled until translucent to be ready.
