Homemade Strawberry Syrup

There is something special about making your own strawberry syrup with fresh berries from the garden. If you do not grow your own, store bought strawberries or berries from your local farmers market work just as well. This simple recipe comes together fast, uses only a few ingredients, and tastes bright and sweet. It is perfect for pancakes, waffles, lemonade, ice cream, and anything that needs a little strawberry flavor.

We grow our own strawberries, so I am always looking for new ways to use them. My husband likes fruit syrups on pancakes and my son loves blueberry sauce, so it made sense to try a fresh strawberry syrup. I also did not want to turn on the oven, so this quick stovetop recipe was the perfect solution.

You can strain out the seeds with a mesh strainer if you want a smoother syrup. I don’t mind the seeds and don’t have the patience to wait to eat this syrup.

  • 1 cup fresh strawberries, stems removed
  • 1 teaspoon lemon juice
  • 6 tablespoons sugar

How to Make Strawberry Syrup

  1. Blend the strawberries: Add the strawberries, lemon juice, and sugar to a blender. Blend until the mixture looks like a smoothie.
  2. Heat the mixture: Pour the blended mixture into a small saucepan. Warm it over medium heat and stir so the sugar melts evenly.
  3. Bring to a boil: Once the syrup starts to boil and becomes foamy, it is ready. If you want, skim off the foam on top.
  4. Cool and store: Pour the syrup into a jar or serving container. Let it cool slightly before using. Store in the refrigerator.

Keep your strawberry syrup in a sealed jar in the refrigerator. It stays fresh for about one week. If you want to keep it longer, place in freezer safe container and freeze it.

Yes. Let it simmer a few extra minutes until it reduces.

Homemade Fresh Strawberry Syrup

This homemade strawberry syrup is made with fresh strawberries and only three ingredients. It cooks in minutes and is perfect for pancakes, waffles, lemonade, ice cream and summer desserts. No straining needed and full of bright strawberry flavor.

  • 1 cup strawberries with stems removed
  • 6 Tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  • Mix the strawberries, lemon juice and sugar in a blender or use a handblender to mix together.
  • Blend until it looks like a smoothie.
  • Pour into a pan and heat until the sugar is melted.
  • Stir to keep from burning.
  • Once it comes to a boil and is foaming, it’s ready, remove from heat.
  • If desired, skim off any bubbly foam.
  • Pour into a jar or into a serving container.
  • Allow to cool slightly before putting on your waffles or pancakes.
  • Let cool completely if using in milkshakes or lemonade.
  • Store cooled syrup in the refrigerator.
