This dish starts on the stove top and goes into the oven and back onto the stove top, within an hour. A delicious favorite that feels fancy, but really isn’t.

You can use chicken thighs for an inepensive dinner option and still be full of flavor. There is a delicious sauce with the chicken and we’ve got a few tricks to make this healtier if you want too.

What Is Tuscan Chicken Made With?

  • boneless skinless chicken breasts/chicken thighs
  • fresh cherry tomatoes (or sun dried tomatoes)
  • salt and pepper
  • olive oil
  • onions
  • minced garlic clove
  • white wine
  • chicken broth
  • heavy cream (or half and half)
  • parmesan cheese
  • fresh baby spinach

How Can I Make My Tuscan Chicken Gluten-Free?

Make this dish gluten-free by making sure all the ingredients and thickeners are gluten-free. Check your chicken broth and use gluten-free flour. You can also use cornstarch as a thickener instead of flour.

What is Tuscan Chicken Sauce Made With?

The sauce is made from white wine, chicken stock and heavy cream as the base of the sauce. You will add in cherry tomatoes, spinach, parmesan cheese, garlic, onions as well to round out the sauce It will be creamy and of course you can’t forget the salt and pepper to season well.

Is This Marry Me Chicken?

They are very similar, but marry me chicken has tomato paste, red pepper flakes and basil in place of some of these ingredients above.

Can I Use Chicken Breasts Instead of Chicken Thighs?

Yes. Chicken breasts can be used in place of chicken thighs and vice versa. Chicken thighs are less expensive (cook them skin side down first) for your tuscan chicken.

Can I Use Fresh Tomatoes in Place of Sundried Tomatoes?

Yes. This recipe uses fresh tomatoes that you cook down to mimic sundried tomatoes. You can also use either grape or cherry tomatoes.

Making a Creamy Sauce

To make a creamy sauce you will want to add the heavy cream (or half and half) after the chicken has cooked in the oven. If you place the cream into the oven, it will separate. To rethicken the sauce, use a water/flour paste to bring the sauce together and a little more cream. Cook on the stove on low heat.

What Pan Should I Use to Make Chicken?

We used an oven safe pan that allowed us to use less dishes. A nice deep frying pan works best to cook the chicken and creamy sauce.

What Can I Serve With the Tuscan Chicken Thighs?

Serve with a side salad, fresh vegetables (or add additional vegetables into the dish) and a soft bread.

Tips For Delicious A Creamy Tuscan Chicken Recipe:

  • You can use grape tomatoes, just cut into 2-3 pieces
  • Use an oven safe pan to cook the chicken in the oven, to avoid changing pans
  • Cooking chicken skin side down first, allows it to crisp and be flavorful

Creamy Tuscan Chicken Dinner

Ingredients

  • 2 chicken thighs or chicken breasts
  • salt and pepper
  • olive oil
  • 1 cup grape or cherry tomatoes halved
  • 1/4 cup chopped onions
  • 1 garlic clove minced
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2/3 cup parmesan cheese
  • 1 cup spinach rough chopped

Instructions

  • Preheat oven to 400℉
  • Place the halved cherry tomatoes onto a dish and drizzle olive oil over them along with salt.
  • Bake for 15 minutes in an oven safe pan.
  • While the tomatoes are cooking, prepare the chicken, adding salt and pepper on both sides..
  • Remove tomatoes from pan and place in a bowl.
  • Heat oil in same pan as tomatoes and place the chicken skin side down (for thighs) in the pan over medium heat on the stove.
  • Cook on both sides for 15 minutes, temp should get to 165℉ internal temperature for the chicken, if it doesn't we'll be putting it in the oven in a few, so no worries.
  • Add the onions and garlic into the pan and then add the wine stir in the cooked tomatoes.
  • Add the chicken stock and allow the sauce to thicken slightly.
  • Place the pan into the oven and allow to cook for 15 minutes, 400℉.
  • Remove the pan from the oven and put on the stove on medium heat.
  • Remove the chicken and add the parmesan cheese and heavy cream.
  • Add the chopped spinach and allow it to wilt.
  • Add the chicken back into the pan for 5 minutes.
  • Serve the chicken with some of the sauce, tomatoes and spinach on the plate.
