Not everyone in our family likes turkey. Shocking I know. We end up baking a ham too. So we have 2 meats and all this leftover turkey at Thanksgiving. There are times that Thanksgiving dinner turkey would go to waste. Let me share with you how to make turkey breast in the instant pot. You can have a nice turkey dinner without taking up all the space in your oven. And you can then cook other dishes.
Sometimes we want turkey, but we don’t want the full blown turkey dinner. Having an instant pot is a time saver!
how to make turkey breast in the instant pot
What you’ll need
2 turkey breasts, removed from bones
1 – 14 oz can chicken broth
1-3 peeled carrots cut into 1″ pieces
Rub
1 stick butter
1/2 teaspoon rosemary
1/2 teaspoon tarragon
1 teaspoon parsley
1 teaspoon sage
1/2 teaspoon ground black pepper

Instructions
In a small bowl, add the butter, rosemary, tarragon, parsley and sage. Mix together.
Take the turkey breast. If it is not already removed from the breast bone, remove it, trying to keep it in one piece.
Pull the skill back and pat the turkey breast try with a paper towel. Evenly distribute the butter on both breasts under the skin. You may just need to flatten it with a knife and then place the skin back onto the turkey breast.
Sprinkle the ground pepper over the turkey breasts and place into the Instant Pot.
I use a steamer basket when cooking the turkey, so I can pull it out easily.
Pour the chicken broth into the instant pot, but not directly on the turkey and add the carrots.
Close the Instant Pot and cook for 1 hour on the meat setting.
Allow the instant pot to natural release for 15 minutes and then quick release until the pressure is gone.
Check with a thermometer to ensure they turkey is at 165F temp internally.
Optional: To cook to a golden brown color, you can place the turkey breast into the oven to brown the skin.
While doing the natural release, you preheat the oven to 350F.
Once pressure is removed, remove the turkey and place into a baking dish with stuffing. Cook until brown (or about 15 minutes)
Remove from the oven, serve and enjoy.
