  • Heat up the griddle to a medium high temp and put oil down on the griddle to keep the meat from sticking.

  • Place the marinara sauce in a small pot and place it on the flat top (or heat up in your kitchen). Set aside once it is warm.
  • Take the melted butter with Italian seasoning and spread on the inside of the buns and place down onto the griddle until golden brown.
  • Flip the patties once they are golden brown. These are going to cook quickly.
  • Place a slice of cheese on each patty and add a about a tablespoon on top of the cheese slice.
  • Add about a Tablespoon full of parmesan cheese on top of the marinera and let it melt. If it's not melting, add the dome with a little water for steam.
  • Once the patty is brown on the bottom, it's time to plate and serve.
  • Stack the patties for double patty burgers or serve as singles.
  • Place the patties onto the buns.
  • If you like the buns saucy and slopping, add more marinara just before serving.

How do You Keep Ground Chicken Burgers from Falling Apart?

The smash chicken burgers are definitely delicate compared to ground beef burgers. One tip is to not put too much bread crumbs in the chicken or it will not stick together. If you add too much, add a little water to get the burgers to form back together into meatballs.

What Can I do with Leftover Ground Chicken or Chicken Patties?

If you have leftover or extra meatballs, you could make lasagna with them. Bake them and the crumble and add into lasagna. If there are leftover chicken burger patties, you can chop up the extra and add into spaghetti and serve with delicious garlic bread or chop and serve again on brioche buns.

Can I Make My Own Ground Chicken?

You definitely can. Use small chicken nugget size chunks of chicken and process in your meat processor or food processer.

How Fast do the Chicken Burger Patties Cook?

Cook patties on a medium high heat and because they are flat, they cook quickly. If you are cooking sides, like beans or corn, start cooking them sooner, because the ground chicken patties will cook quickly as they are thin..

What is a Ground Chicken Substitute?

You can use ground turkey in place of ground chicken. Note that ground turkey is just as delicious for these burgers. Turkey is also delicate and will need to be moist to keep together and be cooked on a flat surface (not a grill) to keep it together. If you don’t have a flattop griddle, you can use a flat grill pan (like what you use to make pancakes on).
