Easy Baked Potato Soup
Potato soup is one of my favorite things to cook, eat and enjoy. I have made it several different ways for my family. I recently made baked potato soup, with leftover baked potatoes. This soup is now my favorite way to make it. When baking potatoes, we bake a few extra, so we can make soup or have American fries.
Taking leftover potatoes and turning them into a delicious soup is so simple. How do you like your potato soup? Do you like it with cracker, cheese or bread?
How to Make Baked Potato Soup
Ingredients:
5 baked potatoes, peeled & cubed
1 can (15 oz) chicken broth
1/2 cup water
1 teaspoon corn starch
1 cup medium cheddar cheese
1/2 cup heavy cream
5 strips bacon cut into small pieces
Instructions:
Take a large pot an place the peeled and cubed (into 1/2″ pieces).
Add the chicken broth. Mix the water and corn starch well and then put into the the potato and broth mix. Mash the potatoes a few times.
Bring to a boil.
Add the cheese, bacon, heavy cream and remove from heat.
Allow the soup to sit for about 5 minutes. It will thicken a bit and cool so it can be ate.
Serve and enjoy.
