Ingredients

  • 1 tablespoon olive oil
  • 1 ½ pounds stew beef
  • 1 bottle Guinness beer
  • 1 large onion cut to large pieces
  • 2 celery sticks cut into 1 inch pieces
  • ½ lb carrots or 1/2 bag baby carrots
  • 1 teaspoon minced garlic
  • 2 teaspoons tomato paste
  • 2 teaspoons Dijon mustard
  • 1 teaspoon sugar
  • 2 bay leaves
  • 1 14 ounce can beef stock
  • 2 cups Yukon potatoes cut into 1 inch pieces

Dredge

  • ¼ cup flour
  • 1 teaspoon pepper

Instructions

  • In your instant pot, add the olive oil and turn the instant pot on and get hot.
  • Dredge the stew beef in the flour and add into the oil.  Allow to brown and turn.
  • While the meat browns, peel and cut the carrots (or use baby carrots), wash and cut the celery and potatoes into chunks.
  • Add the beer into the browned meat to deglaze the pan and add the beef stock.  Next, add the carrots, potatoes, onion and celery.
  • Add the garlic, tomato paste, Dijon mustard, sugar and bay leaves. Stir into the mix.
  • Cook in the instant pot for 55 minutes, allowing natural power release.
  • You can serve with a ladle straight from the Instant Pot with some bread and butter.
