Irish Beef Guinness Stew in the Instant Pot

Hearty Irish Beef Guinness Stew

If you are love stew, you need to check out how to make these Irish beef stew in the Instant Pot.  It is made with Guinness beer giving it that distinct taste you will love.

I love that this is a one pot meal that you can make and walk away.  Not to mention, there are not a lot of dishes to do after making this as everything is cooked in the pot.

Ingredients:
1 tablespoon olive oil
1 1/2 pounds stew beef
Dredge: 1/4 cup  flour mixed with 1 teaspoon pepper
1 bottle Guinness beer
1 large onion cut to large pieces
2 celery sticks cut into 1 inch pieces
1/2 lb carrots (or 1/2 bag baby carrots)
1 teaspoon minced garlic
2 teaspoons tomato paste
2 teaspoons Dijon mustard
1 teaspoon sugar
2 bay leaves
1 14 ounce can beef stock
2 cups Yukon potatoes cut into 1 inch pieces

Instructions:

In your instant pot, add the olive oil and turn the instant pot on and get hot.

Dredge the stew beef in the flour and add into the oil.  Allow to brown and turn.

While the meat browns, peel and cut the carrots (or use baby carrots), wash and cut the celery and potatoes into chunks.

Add the beer into the browned meat to deglaze the pan and add the beef stock.  Next, add the carrots, potatoes, onion and celery.

Add the garlic, tomato paste, Dijon mustard, sugar and bay leaves. Stir into the mix.

Cook in the instant pot for 55 minutes, allowing natural power release.

You can serve with a ladle straight from the Instant Pot with some bread and butter.
