Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds stew beef
- 1 bottle Guinness beer
- 1 large onion cut to large pieces
- 2 celery sticks cut into 1 inch pieces
- ½ lb carrots or 1/2 bag baby carrots
- 1 teaspoon minced garlic
- 2 teaspoons tomato paste
- 2 teaspoons Dijon mustard
- 1 teaspoon sugar
- 2 bay leaves
- 1 14 ounce can beef stock
- 2 cups Yukon potatoes cut into 1 inch pieces
