Strawberry french toast casserole is a great recipe to make when you have a few berries, french bread and you want something different for breakfast. With some planning you can make this casserole for your family. And it’s not super expensive to make either.
This is great for holiday breakfasts too. We have made french toast before, but preparing ahead of time, allows you to pop this in the oven and enjoy your morning while it bakes.
Ingredients:
8×8 square baking dish
about half loaf of French bread, cubed
8-9 strawberries hulled and cut in half
6 eggs
1 1/2 cups half and half
1/2 cup sugar
4 teaspoons maple syrup
1 teaspoon cinnamon

Spray the 8×8 pan with nonstick spray.
Place a layer of french bread on the bottom of the dish.
Add a layer of strawberries evenly on top of the bread and cover with bread so that it is covering the top of the pan. This should take 1/2 loaf to 3/4 loaf of bread, depending on it’s depth.
In a bowl, mix the eggs, half and half, cinnamon and sugar.
Pour the egg mix evenly over the French bread. Drizzle the maple syrup over the bread.
Cover the dish and allow to sit overnight in the refrigerator. If you don’t have time, allow to sit for 30 minutes or until the bread soaks up the egg mix.
Preheat the oven to 325F and bake for 45 minutes.
