When you make the chicken salad at home, you can make a larger batch that will feed your family and be budget friendly (and allow you to eat it when you want). This sandwich can be served on bread, croissants, crackers or ate right out of the bowl.
Make this recipe quick by using left over rotisserie chicken or left overs from chicken breasts. So perfect to make during the summer when you want a light and delicious meal.
What Do I Need to Make Chicken Salad for Sandwiches?
Ingredients:
- cooked boneless, skinless chicken breasts – like my smoked chicken
- mayonnaise
- sour cream
- chopped pecans
- halved red or green grapes
- diced celery
CanI Use I Rotisserie Chicken?
You can use rotisserie or canned chicken if you do not have fresh baked chicken.
What Kind of Grapes Can Be Used?
You can use red grapes or green grapes for this recipe. You can use seedless grapes for this salad.
Can I Use This Salad as an Appetizer?
You can definitely use the chicken salad as an appetizer. You will wnat to to dice the chicken finer as well as the grapes. Doing so will allow the dip to fit on the crackers easier.
Simple Homemade Chicken Salad
Ingredients
- 2 cups cooked boneless skinless chicken breasts
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 cup halved red or green grapes seedless
- 1/4 cup diced celery
- ¼ cup chopped pecans
Instructions
- Cut and measure the chicken into bite size pieces. (a roitisserie chicken adds a lot of flavor)
- In a bowl, mix the mayo and sour cream.
- Mix in the chicken breast, celery, pecans and grapes.
- Allow the chicken to chill in the fridge or serve immediately.
- Serve on bread or croissants or serve as a dip on crackers (may need to be chopped finer for crackers.
