It was the weekend, I’d bought veggies and chicken and the family was hungry. So I quickly whipped up this simple and delicious chicken kebab recipe to grill.
You will want to cook the chicken to 165F internal temperature. I recommend using a meat thermometer to be certain of the meat temp.
You’ll want your veggies chopped in the same size as your meat.
Be sure to also soak your wood skewers in water for 15-20 minutes before grilling. This keeps the skewers from catching fire.
On a clean grill, put some olive oil on paper towel and rub it down. This will help keep the meat from sticking.
Ingredients:
1 yellow onion
1-2 peppers
2 roma tomatoes
cubed chicken breast
salt & pepper
Italian dressing
Instructions:
Using wood skewers? Get them soaking in water. If you don’t have a tray to put them in, use a tall glass and rotate them. They should soak about 15-20 minutes.
Season the grill by wiping olive oil (or canola oil) from a paper towel onto the grates to help prevent sticking.
Turn your grill on to preheat on a medium heat.
If you haven’t already, cut your veggies into 2 inch pieces.
Cut the chicken into 2 inch pieces as well.
Take a skewer and alternate putting tomato, pepper, onion and chicken on the skewers until each has 3-4 pieces of chicken on them.
With the skewers completed, put a little salt and pepper on them.
We put the skewers in a baking dish and then drizzled Italian dressing on them.
With the grill hot, place the skewers down onto the grill.

Close the grill and allow the chicken kebabs to cook 5-7 minutes before turning.
Turn the kebabs and cook on the other side.
Turn the kebabs so that all 4 sides are cooked evenly.
how long to grill chicken kabobs?
The veggies will start to char a bit. Check the temperature of the chicken, it should be an internal temperature of 165F to be completely done.
Once the chicken temperature is 165, the kebabs are done and can be removed from heat and served.
