Fantastic Lasagna with Spinach Recipe
Spinach Lasagna Recipe
Make your lasagna healthy. Okay healthy-ish. If that is even a word. Lasagna with Spinach gives you the beautiful color and a lot of flavor that. Homemade lasagna can be personalized to your tastes and this one checks all the boxes to get your cheese fix and healthy veggies.
This is the perfect dish to make, and then freeze leftovers to enjoy later for lunch or on a day you may not want or have time to cook a meal.
Serve with garlic bread and your favorite cobbler.
Ingredients
Oven ready lasagna noodle
1 package spinach (drained and thawed)
1/2 cup parmesan cheese
1/2 cup shredded mozzarella
1 egg
1/2 teaspoon Italian seasoning
1 teaspoon parsley
8 slices mozzarella cheese
1/2 teaspoon minced garlic
Sauce:
one pound ground beef
24 ounce jar favorite tomato sauce (or smaller)
one pint tomato juice
1/2 teaspoon Italian seasoning
Baking the Lasagna
Instructions:
Preheat oven 375F.
In a pot, start browning the ground beef, add the tomato sauce, tomato juice and Italian seasoning. Allow this to simmer while you prepare the spinach cheese spread.
In a bowl, mix the drained spinach, 1/4 cup parmesan cheese, shredded mozzarella cheese, egg, parsley, minced garlic and Italian seasoning.
In an 8×8 baking dish, add a little of the meat sauce on the bottom.
Add a layer of oven ready lasagna noodles.
Spread 1/3 of the spinach cheese mix and spread evenly.
Add a layer of mozzarella slices on top (ours took 4).
Add a layer of noodles and then 1/3 of the spinach cheese mix.
Place the last layer of noodles on top and the remaining amount of spinach cheese.
Add a layer the meat sauce mix on top, thoroughly coating the lasagna.
Take the remaining slices of mozzarella and place on top of the sauce and spread out the remaining parmesan cheese.
Bake for 45 minutes to 1 hour, until the cheese is melted. Bake longer if you like the cheese a little brown.
Serve your lasagna with extra sauce ladled over top.
Lasagna Baking Tips:
- The spinach can be squeezed in a tea towel to remove excess water
- When allowing the meat sauce to simmer, you can make this in advance and let it simmer for 15-30 minutes to reduce
- You may have extra sauce and it would be great to serve with spaghetti or other pasta noodles and parmesan cheese
- You can add additional mozzarella cheese if you like it cheesy
- Additional sauce in the layers if you want to add meat layers
- If you want smaller portions, use a smaller baking container and freeze one and make one now
- Don’t like spinach as much as we do, half it in the recipe
- Don’t forget to make tiramisu!
