Don’t you just love banana bread? When the banana’s are nice and ripe, is the perfect time to make bread. Bundt banana bread is a pretty way to make if you are having a party or need to bring a dish to pass.
This recipe will not fill the bundt pan to the top and make a huge bread, making it the perfect snack size. If you want to fill your bundt pan, double the recipe. Do keep in mind that this recipe does rise a bit when baking. This size has been more than enough for our family to enjoy and perfect for a dish to pass at our holiday gathering.
Ingredients:
1/2 cup soft butter
1 cup sugar
2 eggs
1 cup mashed bananas
1 teaspoon lemon juice
2 cups flour
3 teaspoons baking powder

Instructions:
Preheat the oven to 375 F.
In a large bowl, mix the butter and sugar and stir.
Add the bananas and lemon juice and mix.
Add the flour and baking powder and mix until combined.
Butter or spray the pan with cooking spray.
Pour the batter into the bundt pan and bake.
Baking time is about 60-75 minutes. (until a toothpick comes out clean).
Remove from the oven and let sit for 5 minutes.
Place a plate on top of the bundt banana bread and carefully flip onto the plate.
Remove the bundt pan and allow to cool.
If desired, you can sprinkle with powdered sugar.
