Apple Jack Pancake Recipe
Pancakes are almost a weekly weekend event in our house. I like to make enough so we have a few left over for the next day (and the kids make at eat the left overs). We love apples and this apple jack pancake recipe, takes pancakes to another level of blissful flavor.

This recipe makes about 16 pancakes. When slicing the apples, you want them to be thin so that they will cook easily (and quickly). We use a good baking apple (like you would use for a pie) when making these pancakes. You can serve them with syrup, butter or just eat them without any topping.
Ingredients:
2 cups flour
2 teaspoons baking soda
1 tablespoon sugar
2 eggs
2 cups buttermilk
1 teaspoon vanilla
*cinnamon apples*
1 apple peeled, cored, quartered and thinly sliced
cinnamon & sugar (mixed like you would for cinnamon toast)
Instructions:
Combine the dry ingredients and then add the eggs, buttermilk and vanilla and mix thoroughly.
In a bowl add your sliced apples and add the cinnamon sugar mix. (this should be made like you would for cinnamon toast)
Stir the apples and get them coated with the sugar mix.
Butter your pan and get it nice and warm.
Place the pancake batter onto the hot pan into small circles (mine use about 1/4 cup of batter).
Place 1 player of apple slices (about 3-4 slices depending on the size of the pancakes)
Allow the pancakes to bubble and then flip and cook the otherside (note you may want to let them cook a little more on the non-pancake side to cook thoroughly)
Once cooked, serve and enjoy.
