Are you looking for a Hawaiian pineapple chicken recipe? This is a twist we took on grilling barbecue chicken while on vacation and made some amazing sweet Hawaiian barbecue chicken on a recent trip to Hawaii. And any chicken you make in Hawaii, is Hawaiian, right? We made this sweet chicken on the grill and it was amazing. It does require making ahead so you can marinade the chicken. We just made the marinade in the morning and had the chicken for dinner.

While on vacation, we had limited food where we were staying. Not a lot of spices. We found some rum and we had bought chicken and bbq. We had chicken another night, but wanted to do something different, so we played around and came up with the simple chicken recipe.
Ingredients
1 pound thin chicken breasts (thawed)
1 cup pineapple chunks (add the juice from it too!)
1 cup bbq sauce (your favorite kind)
1 tablespoon rum (we used a pineapple rum, but you can use your favorite)

Instructions
This is not a dish you put together and grill immediately, you will marinade the chicken 3-4 hours before grilling.
Take the pineapple chunks and put them in a bag or mash with a fork to crush them. We were using fresh pineapple, so this worked for us. If you are using canned, you could use crushed pineapple. Place the crushed pineapple into the bowl.
Add the rum and barbeque sauce and mix to incorporate. Add the chicken and mix so the chicken is coated on both sides with the marinade. Put plastic wrap on top of the bowl (unless you have a seal for it) and place in the fridge for 3-4 hours. You can put in longer if you are doing before work.

When you are ready to grill, remove the chicken and fire up the grill. Once the grill is hot, place the chicken on the grill and discard the marinade.
Allow the chicken to cook through to 165F. Keep an eye on it as the chicken is thin and will cook quickly. Cook on both sides.
Remove from the chicken from the grill, serve and enjoy. You could serve with rice, potatoes and fresh pineapple.
