You can definitely bake a chuck roast and use the leftover roast beef melt sandwiches. If you can roast beef, you can also use the canned beef for this recipe as a quick meal.
This could easily be made into a crock pot recipe if you are starting with a chuck roast you want to cook for dinner and use this for leftovers. Or use as the main dinner for beef sandwiches.
Do I Need to Use Shredded Beef?
You can use shredded beef to start, but left overs from a chuck roast will work as well. Allow the beef broth to stay with the meat to keep it from drying out. Use the seasonings in the recipe below to flavor your meat and give additional flavors.
What Kind of Bread Works Best?
You want to use a bread with a bit of a crust, like French bread. The shredded beef is juicy and the beef broth can cause it to get a little soggy. Sandwich bread will not hold up well when making a sandwich, but use what you have if needed. We use French Bread rolls, like shown below.
What Cheeses Work Best For Sandwiches?
We prefer to use Swiss cheese. You can also use provolone cheese or a nice cheddar cheese for melting. If you like another type of cheese, you can certainly use those as well.
How Do I Reheat a Roast Beef Melt?
If you haven’t assembled the sandwich, heating up the meat and toasting the sandwich bread separately would be best. If already assembled, use a toaster oven to melt the cheese on top. You can also use a pan on the stove on low and heat the bread, meat and cheese. Keep an eye on the bread that it does not burn.
How Do I Keep The Bread From Becoming Soggy?
First don’t use regular bread. Use a French bread roll. To keep your bread from getting soggy, toast the bread. This will crisp the bread and help it from becoming super soggy. Another thing you can do is add cheese. This gives a barrier between the bread and meat. The toasting and cheese help add texture and taste, while preventing (potentially) the bread from becoming soggy.

Most definitely. You can turn the beef broth into a delicious au jus dipping sauce. This will take your shredded beef sandwiches up a level. Add beef broth to a cup and serve it on the side.
Loose Beef & Swiss Sandwich
Ingredients
- 1 quart canned roast beef
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- slices Swiss cheese
- 2 slices sub bread buttered on 1 side
Instructions
- Add your cooked/canned roast beef into a pan, juice and all and warm up on medium heat.
- Gently chop meat up to remove chunks.
- In a small bowl, mix together the salt, pepper, onion & garlic powder.
- Heat the meat up, add in a 1/2 teaspoon of the onion & garlic powder, salt & pepper. You will be adding the seasoning to your taste and may not use all of it.
- Cook and reduce the juices. You can remove excessive juice if needed, but reserve it in case you want to pour on your bread.
- Take your lightly buttered bread and place it face down on a pan to lightly toast.
- Cook the beef from a slightly redish color to a brown color.
- Once the bread is toasted and the beef is warmed and changes color (it may already be brown). Place slices of cheese down on both sides of the bread, then add a layer of meat on one side of the bread. You can add additional seasoning if desired.
- Combine the slices of bread to form a sandwich and serve, cut in half or quarters, depending on size of your bread.
