Sometimes when I make banana bread, I’m the only one who eat it. So making banana bread for one is perfect. What’s even better is you can make your banana bread in a mug, microwave it and have it in less than 5 minutes.
Perfect for when you want to use those last few bananas. Eat it with a fork in the mug and you won’t have to share.
If you have someone that doesn’t like nuts, make them one without nuts.
When making my banana bread, I used a 3 cup, coffee cup. I recommend you use at least a 2 cup mug as the bread does rise or less mix to make your bread.
4 Tablespoons flour
2 Tablespoons white sugar
1 mashed banana
1 Tablespoon soft butter
1/2 teaspoon baking powder
2 Tablespoons nuts (optional)
In a bowl mix the butter, sugar egg and banana (and nuts).
Add the flour and baking powder and blend. (you could also mix everything together at once)
Take your coffee cup and spray it with cooking spray.
Put the dough into your coffee mug and place into the microwave.
Microwave on high for 2-3 minutes (depending on the wattage of your microwave, mine was done at 2:30 1200 watts)
Remove from the cup from the microwave, the mug will be hot so use caution.
Allow to cool and you can put a dab of butter on the top and enjoy.
You can also remove from the cup and enjoy.
