Grandma’s Potato Soup
We make potato soup several different ways, with bacon, cheese, in a slower cooker, etc. I find that sometimes when we make it, it’s like mashed potatoes.
This is more of an old fashioned potato soup because you are taking left overs and turning them into soup. This potato soup recipe is super easy to make.

Old Fashioned Potato Soup - Amish Potato Soup
Ingredients
- 6 cups left over mashed potatoes
- 3-4 cooked & peeled potatoes
- 1 cup chicken stock
- 1 cup half and half
- 3-4 strips bacon
- 1/2-3/4 cup shredded cheddar cheese
- 1 pinch pepper
Instructions
- In a large pot, add the mashed potatoes and sliced potatoes.
- Add the half and half and chicken stock and heat on medium heat.
- Stir and add the bacon and pepper.
- Once the soup is hot, add the cheese.
- When the cheese is melted, the soup is ready to serve.

Should I Peel My Potatoes for Potato Soup?
You can make your soup either way. If you like potato skins, keep them on. If you don’t, peel them and then cube them. You can really customize this recipe to fit your tastes.
How Do I Spice Up Bland Potato Soup?
You can add 1/2 yellow onions, minced for flavor. Add more salt and freshly cracked black pepper for more spice or 1/2 teaspoon garlic powder. Use a sharp cheddar cheese (if you are adding cheese). Top your soup with minced green onions and sour cream for added flavor.
What Makes This Old Fashioned Potato Soup?
I would say it’s old fashioned, because you are taking left over mashed potatoes and baked potatoes and turning them into another meal. This soup is sometimes called Amish potato soup, I believe it’s for the same reason, nothing is wasted. Making a meal out of leftovers saves time preparing and money.
Are Russets Good for Potato Soup?
Russets are my favorite to make potato soup with. You can make the soup with Yukon Gold or Red potatoes, peeled or unpeeled. If you get the baby Yukon/red potatoes, you can wash and halve them and cook, mash and use for potato soup.
What is A Good Thickener for Potato Soup?
If you find your soup is thin, you can thicken it with a little corn starch and water. If you have a corn starch allergy, you can add flour.
How Do You Make Potato Soup Creamy?
To make a creamy potato soup, you can use milk (whole milk or 2%). Half and half will make it creamier. Evaporated milk will make it rich. If you only have heavy cream, you can mix it water to make it more of a half and half consistency.
Should I Add Chicken Broth or Vegetable Broth to Potato Soup?
Yes! Which ever you prefer, you should add when making potato soup. The broth adds a lot of flavor and helps from having a bland potato soup.
