mini blueberry french toast casserole
Breakfast casseroles are easy to put together and usually made with leftovers. Not everyone likes the same thing in our house, so I make mini french toast casserole for one. Making blueberry casserole is easy. You can make it ahead the night before and cook in the morning. I have also found letting it sit for about 30-45 minutes before you bake it also works.
I have mini casserole dishes that make making mini dishes easily. If you want to make this dish for your family, you can times the recipe by 4 and bake in an 8×8 dish.
Ingredients:
about 1 cup of french bread cut/broke into 1 inch pieces
2 eggs
1/4 cups milk (can also use half and half)
1/4 teaspoon cinnamon
1 teaspoon sugar
1 teaspoon maple syrup
make delicious hash brown casserole
Instructions:
In a bowl, add the eggs, milk, sugar and maple syrup. Mix the ingredients well.
Add the bread and mix into the egg mixture.
Sprinkle 1/2 the cinnamon on the bread, mix and sprinkle the remainder and mix again.
Add the blueberries and again mix to get the blueberries throughout the mixture.
Allow the mixture to sit for 30-45 minutes. Once the egg mix is soaked into the bread, you are ready to bake.
Turn the oven on to 350F an bake 30 minutes or once the egg mix is no longer wet.
Served and drizzle your favorite maple syrup on your casserole.
