Mini Blueberry French Toast Casserole
Breakfast casseroles are easy to put together and usually made with leftovers. Not everyone likes the same thing in our house, so I make mini French toast casserole for one. Making blueberry casserole is easy. You can make it ahead the night before and cook in the morning. I have also found letting it sit for about 30-45 minutes before you bake it also works.
I have mini casserole dishes that make making mini dishes easily. If you want to make this dish for your family, you can times the recipe by 4 and bake in an 8×8 dish. Serve with hashbrown casserole.
What Ingredients Are Needed?
- French bread cut/broke into 1 inch pieces
- eggs
- milk (can also use half and half)
- cinnamon
- sugar
- maple syrup
Can I Use Fresh Blueberries?
You definitely can. We have used frozen, so that they don’t all pop while baking.
What Bread Is Used for French Toast?
We use Italian bread typically. You can use Texas toast as it’s a thicker toast and will absorb the liquid without becoming soggy.

How many blueberries? What size baking dish?
Use 1/2 cup to 3/4 cup of blueberries. The dish we used is square and about 5-6″ wide.
