Simple Homemade Lasagna Rolls

How to Make Lasagna Roll Ups
Do you normally make lasagna where you lay out the lasagna noodles in strips and in layers? I do too. But when I’m trying to take it up a notch, I will make lasagna rolls for special occasions with family and friends.
When you make lasagna rolls, its like each noodle becomes a portion. This recipe will make an entire 9×13 pan of lasagna.
You can do what we do, make the entire batch, and then have one for now, and one for later and freeze it. This helps with us not tossing out leftovers.

What Is Needed to Make Lasagna Rolls?
- ricotta cheese
- shredded mozzarella cheese
- shredded Parmesan cheese
- eggs
- parsley
- lasagna noodles
- ground beef
- favorite tomato sauce
- Oregano or Italian seasoning

What Are Lasagna Rolls?
Lasagna rolls are made from a single lasagna noodle. The ricotta is spread onto the noodle. The noodle is then rolled up and placed either like a cinnamon roll in a tray or flat down (my preference) Cheese, meat and sauced are then applied on top and baked.
Easy Lasagna Roll Ups
Ingredients
- 15 ounce ricotta cheese
- 4 oz shredded mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- 2 eggs
- 1/2 teaspoon parsley
- 16 ounce box lasagna noodles
- 1 pound browned ground beef
- 24 ounce jar of your favorite tomato sauce
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 375F degrees.
- Bring water to a boil and then add lasagna noodles. Do not break them, they need to be rolled.
- Cook lasagna until they are flexible, drain and add cooled water.
- Once cooled, drain the water from the noodles.
Cheese Mix
- In a bowl, mix together the eggs, ricotta, shredded mozzarella, Parmesan cheese and parsley.
Ground Beef
- Cook the ground beef until browned and add the jar of tomato sauce and oregano/Italian seasoning and allow to heat up. Mix up the sauce mix and bring to simmer, remove from heat.
Assembly
- In your baking pan, put down a layer of meat sauce on the bottom (to keep the noodles from sticking), a couple Tablespoons full.
- Take a noodle and lay flat on a cutting board. Take about 2 tablespoons of the cheese mixture and spread it on the noodle.(use less to stretch the cheese mixture to make more, or just make more cheese mix!)
- Roll the noodle up so it looks like shredded wheat or a round bale of hay.
- Place the noodle into the pan and repeat until all the lasagna noodles are filled or you run out of space or cheese mix. Push the noodles together more if you run out of space.
- Add a layer of meat sauce on top of the noodles.
- Take the meat sauce and pour it on top of the noodles evenly to keep them moist while cooking.
- Take left over cup of mozzarella cheese and spread it on top of the sauce.
- You can spread a little Italian seasoning on top of the cheese.
- Place pan in the oven and bake until cheese is golden brown, 30-35 minutes.
Notes
How Many Lasagna Rolls Are a Serving?
Depending on how hungry you are, 1 to 2 lasagna rolls per person.

Can I Freeze Lasagna Noodles Before Baking?
Yes. You can flash freeze lasagna rolls prior to baking and store in a freezer safe container and bake as many as you want to serve per meal. You can also flash freeze after baking so that you can heat up as many noodles you want to serve for a quick dinner, once heated up of course!

How Do I Keep The Noodles From Drying Out While Baking?
Make sure you have enough tomato sauce when you cover the noodles. The noodles will absorb a bit of the liquid. Add a little water if needed. Also ensure the noodles are covered in sauce and cheese to protect the noodles from drying out.

What Do I Serve With Lasagna?
We serve homemade garlic bread, with our own garlic spread. With a side of green beans or corn.

Lasagna rolls are perfect for portion control.
You don’t have to make a huge pot of it and you can eat half and leave the other for later.

This is super easy to make and we have everything except for the ricotta cheese, but you could use cottage cheese instead – so we may be trying this this week! 🙂
