Chicken Gnocchi Soup Recipe
We have fallen in love with the Olive Garden chicken gnocchi soup. Gnocchi’s are little potato dumplings and just add heartiness to this soup.
If you are looking for a way to use leftovers, this recipe is a great way to combine a few veggies, spices and you’ll pull together a delicious hearty soup. Don’t worry if you don’t have leftovers, you make make this gnocchi soup from fresh ingredients too.

Do I Need to Make Homemade Gnocchi?
You do not need to make your own gnocchi. You can find gnocchi in the pasta area of your store, typically on the top shelf in a sealed bag.
What is Gnocchi Made From?
It has mashed potato and flour in it for the main ingredients. This makes a potato gnocchi.
What Can I Serve With Gnocchi Soup?
You can serve crackers, buttermilk biscuit with your soup. You can use it as a meal or as a side to your lasagna, spaghetti, whatever you want. A nice crusty bread with a little butter also goes nicely with the gnocchi soup.
How Can I Thicken My Soup?
You can use a flour butter roux. Melt the butter and mix in the flour and cook it for about a minute (to remove the flour taste). Slowly add (stirring vigorously into the soup) to remove any lumps. This should thicken the soup.
How Can I Thin a Thick Soup?
If your soup is to thick, add a little water at a time until it’s the desired thickness. If you are finding you are adding a lot of water, you could add milk instead or chicken stock to not dilute the flavor.
My Soup Tastes Bland
You can add additional pepper or any of the other spices to your taste to enhance the flavor of your soup.
What Makes a Creamy Chicken Gnocchi Soup?
Adding half and half and milk will give you a creamy soup. You can substitute milk with our favorite milk substitute or reduce the milk and add more chicken stock.
What Type of Chicken Is Used?
We use leftover chicken for this soup. Chicken from a rotisserie chicken cut into bite size pieces. You can use shredded chicken breasts and canned chicken as well to make this soup. If you don’t have this you can also cut fresh chicken breasts into pieces and cook the chicken until done while starting the veggies.
Homemade Chicken Gnocchi Soup
Ingredients
- 1 cooked chicken breast cut into bite size pieces or 1 cup rotisserie chicken
- 1 stalk celery finely chopped
- 1/2 cup thinly sliced carrots
- 1 Tablespoon minced onion or 1 small onion finely chopped
- 1 Tablespoon olive oil
- 1 Tablespoon minced garlic
- 4 cups chicken broth/stock
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- 1/8 teaspoon nutmeg
- 5 Tablespoons butter
- 6 Tablespoons flour
- 2 cups milk
- 2/3 cup half and half
- 1 cup chopped fresh spinach or 1/4 cup thawed frozen
- 1 cup cubed potatos (optional)
- 1/2 teaspoon pepper
Instructions
- On medium heat, add into a Dutch oven the olive oil, garlic, onions, celery and carrots. Stir to evenly cook.
- Cook on medium to start to soften the veggies.
- When veggies start to soften, add the chicken and chicken stock/broth
- Add in the rosemary, thyme and nutmeg and stir. Allow the broth to heat up.
- Add your optional cubed potatoes at this point.
- In a small pan, melt the butter and flour together and incorporate and then add into to the pan and stir to incorporate.
- Add the gnocchi, half and half, and milk and bring to a simmer.
- Don't forget to add the pepper!
- Add the chopped spinach. Once the spinach wilts, it is ready to serve.

Notes
- If you do not have canned or rotisserie chicken, you can use chicken breast cut into small 1 inch pieces and sauté with veggies until cooked through before adding additional ingredients.
- If your soup seems thick, add water to thin out.
- Adjust the amount of spinach used to your taste.
- Use thawed and drained spinach instead of fresh, but use 1/4 of fresh because it’s now compact from draining.
The soup was creamy and love all the veggies in it. Made great leftovers!
