homemade meatloaf recipe
Growing up we ate homemade meatloaf what seemed like every couple of weeks. My husband is a huge fan of meatloaf, my kids are not, so we make mini loaves.
It’s a great recipe to make and by adding a little bread, it will stretch the number it can feed. Adding the many spices offers a great weekend dish. Left overs are great to enjoy later. Have you ever had a meatloaf sandwich?
We like to have the bread sit out for a few hours and dry out a bit. If you don’t have bread, you can substitute bread crumbs. We also mix and match using both.
Tip: If you don’t want to cook an entire loaf, make mini loaves (freezing and covering). Cook and enjoy later Note the date on the ones you freeze so they aren’t lost in the freezer forever.
Ingredients:
1 1/2 lbs hamburger
4 slices bread (cut into small pieces)*
1/2 cup ketchup (reserve half)
1/4 cup brown sugar (reserve half)*
2 eggs
1 tablespoon minced onion
1/2 teaspoon of both pepper & salt
*Topping is part of the ketchup & brown sugar the rest goes in the meatloaf
Instructions:
To cook immediately, preheat the oven to 350F.
In a bowl, mix well all the ingredients (except half the ketchup and brown sugar).
Spray a loaf pan (or use mini loaf pans) with non-stick spray. (Makes 1 large or 3 mini loaves).
Place equal parts into each loaf pan.
Mix the ketchup and brown sugar that was held back.
Place it on top of each loaf and spread out.
Cook the meatloaf 1 hours to 1 hour 15 minutes.
