Homemade Meatloaf Recipe

Growing up we ate homemade meatloaf what seemed like every couple of weeks.  It’s simple, easy and packed full of delicious flavors.

It’s a great recipe to make and by adding a little bread, it will stretch the number of people it can feed. You can easily adjust the amount of spices you add to give it an intense flavor or subtle, you decide. Turn any leftovers you are lucky to have into a meaty meatloaf sandwich.

We like to have the bread sit out for a few hours and dry out a bit.  If you don’t have bread, you can substitute bread crumbs.  We also mix and match sometimes, using both.

Tip: If you don’t want to cook an entire loaf, make mini loaves (freezing and covering).  Cook and enjoy later . Note the date on the ones you freeze so they aren’t lost in the freezer forever.

What Ingredients Are Needed?

  • hamburger
  • slices bread
  • ketchup
  • brown sugar
  • eggs
  • minced onion
  • pepper & salt

What Can I Serve With Meatloaf?

You can serve meatloaf with baked potatoes, mashed potatoes, green beans or baked beans, to name a few.

Can I Make Smaller Portions?

Yes. Turn your one pound of ground beef meatloaf into three third pound mini meatloaves. This gives you 3 meals instead of one.

How Lean Should The Ground Beef Be?

Use the ground beef you typically by. We use 80/20 or 85/15 typically. But whatever you normally by is fine. There will be grease and the amount varies on how lean your beef is. Don’t by anything special.

Simple & Tasty Meatloaf

  • 1 1/2 lbs hamburger
  • 4 slices bread cut into small pieces*
  • 1/2 cup ketchup reserve half
  • 1/4 cup brown sugar reserve half*
  • 2 eggs
  • 1 tablespoon minced onion
  • 1/2 teaspoon of both pepper & salt
  • *Topping is part of the ketchup & brown sugar the rest goes in the meatloaf


  • To cook immediately, preheat the oven to 350℉.
  • In a bowl, mix well all the ingredients (except half the ketchup and brown sugar).
  • Spray a loaf pan (or use mini loaf pans) with non-stick spray. (Makes 1 large or 3 mini loaves).
  • Place equal parts into each loaf pan.
  • Mix the ketchup and brown sugar that was held back.
  • Place it on top of each loaf and spread out.
  • Cook the meatloaf 1 hours to 1 hour 15 minutes.
