What Makes this a Lemon Cake?
We’ve added lemon juice, lemon zest and made our own lemon extract to pack as much lemon flavor into the cake as possible. Our yellow cake is similar with a few twists.
How do I Keep my Cake Moist and Not Dry?
This cake is baked at 325F. This allows the cake to bake at a lower temperature and retain it’s moisture, while cooking. Checking the last 10 minutes of baking time will also allow you to ensure the optimal moisture in your cake. Look for the edges to start to move away from the edge of the pan signaling it’s close to done or is done.
Do I Need Fresh Lemon Juice?
Fresh lemon juice is preferred, but if you do not have this, you can use bottled lemon juice. You may not have lemon zest and that is ok as well.
How do I Prevent My Cake From Sticking to the Pan?
We use a baking spray on the pan. You can also use a non-stick spray and follow up with a light dusting of flour on the pan to keep the pan from sticking.
Can I Make Cupcakes with this Recipe?
Definitely? You will want to reduce the baking time as smaller cakes/cupcakes, bake quicker. You can also remove the middle and add a delicious lemon curd filling into these cupcakes for an added lemon pop.
Cake Baking Tips:
- If you normally have cake flour, you can use that in place of all purpose flour.
- Use 1/4 teaspoon less salt if using salted butter
- Frost the cake with a lemon frosting, strawberry frosting, amazing lemon butter cream frosting or a lemon glaze (you pick!)

- 3 cups flour
- 2 cups sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 cup melted butter cooled
- 1 cup lemon juice
- 1 Tablespoon milk
- 4 eggs
- 1 1/2 teaspoons lemon/vanilla extract
- zest from 1 lemon
Instructions
- Preheat oven 325℉ .In a large bowl, add flour, sugar, salt and baking powder. Mix together.Add butter, milk and lemon juice. Butter should be cooled, not hot. Mix together.Add the eggs and mix together with hand mixer.Add lemon (or vanilla) extract and zest, mixing together. Place into 9×13 pan (spray with non-stick spray). You can also use 2 round pans or make cupcakes.Bake for 30-40 minutes until a toothpick check comes out clean.
