How to Make Pineapple Cupcakes

Baked pineapple cupcakes

This is a moist and delicious pineapple cupcake recipe . You can top it with toasted coconut or chopped nuts, whichever you desire.

Do You Use A Cake Mix?

We make our own cake mix to know what we are putting in the cupcakes. You can certainly use a cake mix instead if you are in a hurry and do not have all the ingredients to make them homemade. (You can use a yellow cake mix). Be sure to preheat oven to 350 so the oven is ready when you are done making the batter.

Can You Substitute Crushed Pineapple?

If you only have pineapple chunks, you can crush them in the blender and make crushed pineapple. You do not need to to drain out the pineapple juice, it’s ok to leave in. You can also do this with fresh pineapple to make crushed pineapple.

What Kind of Frosting For These Cupcakes?

We use a cream cheese frosting to make these cupcakes. You could certainly use a pineapple buttercream frosting (made with some pineapple juice or crushed pineapple) to really give the pineapple flavor throughout the cupcakes.

Do You Use Cupcake Liners or Not?

I’m team cupcake liners when you are making these to share with guest at a party. It also makes clean up easier on the baking tin. Line muffin pan prior to starting to fill them so the process moves more efficiently.

How Do You Check The Cupcakes Are Baked?

After the cupcakes are cooked for the set time, or we start to smell that they might be done, we check put a toothpick inserted into the cupcake. If it comes out clean, they are done. If batter is on the toothpick, they are not.

Do You Always Add the Wet Ingredients Together And Then Dry?

No. Sometimes this does not happen. We do try to mix the baking powder, flour and other dry ingredients together first, so that they get mixed well. And then add the wet ingredients either mixed in a separate bowl or next. You can use a hand mixer or mix by hand.

How Do You Decorate The Cupcakes?

We place the cream cheese frosting in a freezer bag and snip the corner to decorate.  If you don’t allow the cupcakes to cool completely, the frosting will melt. If the frosting is not a little stiff, it will melt into the cupcake or fall off. The frosting cannot be complete cold, it needs to be pliable or decorate the cupcakes and put directly into the fridge.

Homemade Pineapple Cupcakes

Aloha! These pineapple cupcakes are topped with toasted coconut. Super delicious and such a fun combination to enjoy together.

Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 2 cup flour
  • 1 /2 cup crushed pineapple
  • 1/2 cup vegetable oil
  • 3 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup chopped nuts (optional)
  • 1 cup toasted coconut
  • cream cheese frosting

Instructions

  • Preheat oven 350 degrees.
  • In a large bowl, beat the eggs until they become lighter yellow.
  • Mix together with everything else sugar, pineapple and oil.
  • Add in the baking soda and salt and mix.
  • Add the optional nuts and then flour and mix.
  • Put into cupcake papers and cook for 30-45 minutes.
  • Test with toothpick and when it comes out clean, they are done.
  • Cool and put cream cheese frosting on and top with coconut.

    1. It’s a delightful dish for sure. I put my extra cupcakes in the freezer, to keep from eating them all this week!
