Easy Potato Soup
On a trip to Scotland, we had some AMAZING potato soup. As I sometimes do, I look at the dish and try to figure out what went in it to make it….and can I recreate it at home. Here is what we came up with for this delicious potato soup recipe.
We stayed in Stranraer, Scotland at the North West Castle Hotel. We enjoyed lunch and dinner at this lovely hotel. During lunch, my son ordered this delicious potato soup that I got a taste of. So when we went to have dinner, I wanted that soup. but they changed soups for dinner. So once I got home, I decided I needed to recreate it as best I could. this is pretty close to what we experienced in Scotland.
Ingredients:
2 tablespoons butter
1/4 cup flour
1 16 oz can beef broth
2 cups water
4 cups new (small potatoes) peeled/not peeled, cut into quarters
2 cups baby carrots cut in half
1/2 teaspoon pepper
1 teaspoon dried basil leaves
2 bay leaves
1/2 teaspoon minced garlic
1 teaspoon minced onion
Instructions:
In a large pan (like a 5 quart pan), add butter and allow to melt with the flour.
Add the broth, water, potatoes and carrots.
Add the remaining ingredients and stir.
Cook until the carrots and potatoes are fork tender. Remove the bay leaves.
Serve the potato soup in a bowl with bread and butter.
