Banana bread is a staple in our house. It is an easy sweet bread to make when your bananas get riper than you possibly want to enjoy (and it’s a great way for things not to go to waste).  Brown bananas are sweeter too.  We changed this recipe up and made it an oatmeal banana bread.

Adding oatmeal was another way we were able to hide oatmeal in the bread for our kids to try.   They figured it out.

This recipe will make  1 large loaf pan or 3 small loaves.   I prefer to make smaller loaves as you can share them or freeze 2 and eat one.  Freezing the extras allows you to enjoy bread again, without having to bake.  Mini loaves will take about 30 minutes less cooking time.

Once the bread has baked, we like to enjoy a slice with a little pat of butter and a glass of milk.  And oatmeal banana bread is great for breakfast too!

Ingredients:

1/2 cup soft butter
1 cup sugar
2 eggs
1 cup mashed bananas (we use 3 regular size bananas)
1 teaspoon lemon juice
3 teaspoons baking powder
1 cup oats
1 1/2 cups flour
1 cup nuts (optional)

Instructions:

Preheat your oven to 375 F.
In a large bowl, mix the butter and sugar and stir.
You can mix in the bananas eggs, and lemon juice and mix.
Add the oatmeal, flour and baking powder (and optional nuts) and mix until combined.
Butter the pans or spray with cooking spray.
Pour the batter into the pans and bake until a toothpick comes out clean.
Cooking time is about 1 1/4 hours for large loaf and 1 hour for mini loaves.
