Measure out the oatmeal and peanut butter and have the vanilla on hand to pour quickly. Also have parchment paper ready on counter. Set aside and prepare next ingredients.
In a large pot mix the sugar and cocoa together.
Once sugar and cocoa are mixed, turn on heat to medium and add in butter and evaporated milk.
Stir together on medium heat and bring to a boil. A boil that you cannot stir down. Set a timer for 1 ½ minutes, stirring the entire time.
Once time is done, remove pan from the heat and add in the peanut butter and stir together.
Add the vanilla and stir and then add in the oatmeal and stir completely together.
Working quickly, place drop cookies with tablespoons onto parchment paper. Repeat process until all the mix is used.
Allow the cookies to dry, cool and set before eatting. Store left overs in airtight container.
