Pressure Cooked Pot Roast | Instant Pot
Speed up making Sunday dinner. Make the best pressure cooker pot roast. Perfect for those days you want dinner, but not all day in the kitchen.

Ingredients
1
2-3 pound roast, thawed

Tablespoon
olive oil
1
Tablespoon
minced onions/packet onion soup
4-5
peeled potatoes, cubed
6-8
peels carrots, chopped
1
can
beef broth
ground pepper to cover both sides of the roast
Instructions
Turn your Instant Pot on Sauté and add olive oil.
Cut the roast in half and place into hot Instant Pot.
Add black pepper onto the top of the meat as it sears.
Cut and peel your potatoes and carrots.
Turn over your pot roast and add pepper to the other side.
Add the vegetables into the pot.
Pour a can of beef stock into the pot.
Add minced onions on top and close the Instant Pot.
Set the Instant Pot to cook on high for 45 minutes.
Once finished cooking, do a quick release on the Instant Pot.
Remove the vegetables and meat and serve.

Pot Roast Tips:
You can use fresh or dried onions (use 1/2 cup of onions if fresh)
Instead of onions, you could use an onion soup packet
Add 2 bay leaves for additional flavor
If your roast is more than 1 1/2 pounds, cut it in half so that it cooks until its tender. If you don't, you will have a tough roast.
