Instructions
In a bowl, mix sugar and egg yolks together.
In a pan, heat up the heavy cream, milk, vanilla, salt and nutmeg until it simmers.
Once it simmers, we need to temper the eggs with this mix.
Slowly add a little into the eggs and mix well. Slowly add in until 1/2 or 3/4 of the mix is in the eggs.
Use a strainer and mix the egg mix, back into the milk in the pot and heat up.
Stir and heat up until the temperature reaches 160F.
Eggnog will thicken up.
Strain the eggnog into a bowl/pitcher and cover with plastic wrap.
Once it has cooled, you can pour into a canning jar and store in the fridge.
This will keep for 1-2 weeks.

If the eggnog is thicker than you like, you can thin with a little milk.
