- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3 Tablespoons cinnamon
- 1/8 teaspoon sea salt
- 2 egg whites
- 1/4 cup water
- 2 teaspoons vanilla
- 4 cups halved raw pecans (no salt)
Instructions
- Use at least a 4-quart slow cooker.
- Use a slow cooker bag or spray the inside of the crock pot with cooking spray. Easy clean up is using the bag.
- In a large bowl, mix the sugar, cinnamon, and salt.
- In a separate bowl, whisk together the water, egg whites and vanilla.
- Take the pecans and put them into the bowl with the egg white mix and stir together with a spatula, coating all the pecans well.
- Stir until the pecans are coated thoroughly and appear wet/shiny.
- Dump the nuts into the cinnamon sugar and coat thoroughly. Make sure all the nuts are coated in cinnamon and sugar.
- Put the liner into the slow cooker.
- Pour the coated pecans into the slow cooker. Even out the nuts and put the slow cooker on high.
- You will cook this for 2 1/2 - 3 hours, stirring every 30 minutes to keep them from burning and sticking together in clumps.
- You want the nuts crispy, but not blackened, so keep an eye on the color the nuts are.
- About 30 minutes before they are done, remove the cover on the crock pot, so the condensation in the pot is removed from the nuts.
- Remove the candied nuts from the slow cooker and place on the parchment or silicone mat. Allow to cool before placing in your containers or eating.
- These nuts can be put in small airtight containers and give as Christmas gifts.
