Prepare the onions by cutting off the ends and removing the out skin.
Cut the onions into 1/2 inch slices and place into a zip bag.
Place the bag(s) into the refrigerator and allow them to sit for 3-4 hours (optional)
Place the onions onto dehydrator trays.
Put the full trays into the dehydrator and set temp to 135F.
Allow the onions to dehydrated 15-20 hours. The onions should be crisp.
Remove the onions from the dehydrator.
Take your grinder (we use a coffee grinder) to grind the onions to small pieces.Alternatively, if you don't want them small, place into the jar and press down to make them smaller, but not minced.
Use the mesh strainer to separate the powder from the chopped onions.
Place the powder into a separate jar.
Stir the mix for a few days as there may be a little moisture left.
Label and place the jar tops on.

If you can, place the dehydrator outside (protected from the elements).Onions are stinky and will fill your house (and nose) with the smell of onions. And the smell will linger for a few days.
