Crispy Cast Iron Peach Cobbler
This cast iron peach cobbler has a golden, buttery topping and perfectly soft peaches. Make it with fresh, frozen, or canned peaches for an easy, delicious dessert.

Cobbler Topping

Instructions
Prep the Peaches
Preheat oven to 425°F.
Peel, pit, and slice your peaches.
Drain well and use about half the juice.
In a large bowl, mix the white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
Add peaches and toss to coat.
Pour peaches and juices into a greased cast iron skillet.
Place skillet on the stove over medium heat and cook for 10 minutes, letting the peaches bubble and soften.
Make the Cobbler Topping
In a bowl, combine flour, white sugar, brown sugar, cinnamon and baking powder.
Add the cold butter cubes and mix with a fork until the mixture looks like coarse crumbs.
Sprinkle the crumb mixture evenly over the peaches.
Add the remaining 2 Tablespoons of butter on top.This is what gives the cobbler that crispy, buttery crust.
Bake
Bake for 30 minutes, or until the top is golden brown and crisp and the peach juices are bubbling around the edges.
Remove from the oven and allow to cool before serving. You can enjoy it warm once it's stopped bubbling.
