Mix in the eggs, brown sugar and soft butter and mix together.
Add the vanilla and mix.
Pour in the flour and baking powder.
Do not over mix, you just want everything incorporated.
Overmixing can make the bread dense.
Spray loaf pan (s) with non-stick spray.
Add 1/3 of the batter if you are making 3 mini loaves, or put it all into 1 large loaf pan if you are making a large one.
Place loaf pan(s) onto a baking sheet to keep from tipping in the oven.
Bake for 30 -35 minutes for a mini loaf and 1 1/2 hours for a large (regular) loaf.
Remove from the oven and allow to cool for a few minutes before removing from the pan.
Store in aluminum foil.

You can freeze extra loaves, slices in aluminum foil (we also wrap first in plastic wrap, to keep the foil from sticking to the bread).Mini loaves bake quicker than a large loaf.
