easy strawberry shortcake recipe
Our family loves strawberry shortcake. Sometimes, we don’t have time to make the dough to make biscuits. So we ‘cheat’. We make a quick strawberry shortcake recipe, and you can too!
When I make dinner, I have a can of ready made biscuits. I’ll serve them for dinner. And then what is left, is used to make strawberry shortcake. That is one of my secrets to strawberry shortcake and requires not a lot of effort.
Another way I save time, is blending my strawberries in the blender. It makes more of a puree if I go to long, which is okay. This can be used in smoothies, lemonade and over ice cream. You could even use it over pancakes for breakfast or on toast.
I will take a quart of strawberries and add in 1/2-1 cup of sugar and mix. You’ll need to taste to see if what amount works for you. Some strawberries are sweeter than others.
Tip: Smaller strawberries are sweeter than large one.
You will want to take the biscuits and cut them in half. As an alternative for kids, I sometimes will break the biscuit into bite size pieces.
You’ll want to put the bottom of the biscuit down at the bottom of your dish. Then put 2-3 tablespoons of the strawberry mix on the biscuit.
Put the top of the biscuit back on the bottom and add 2-3 tablespoons of the strawberry mix on top.
Add whipped cream to top it off.
Simple, easy and made from left over biscuits. It’s a perfect dish we make a lot in the summer. To keep the house from getting too hot, we use our toaster oven. If you have one of those, you could bake the biscuits in it. Or if you are grilling, try your hand at grilling the biscuits on a pan, in the grill.
