Thanks to Red Gold for sending me the Red Gold Petite Diced Tomatoes with Lime Juice & Cilantro to make this easy recipe.
Get a taste of the Islands in your own backyard with this delicious burger.
What you’ll need:
1 pound ground chicken
1 – 14.5 oz can Red Gold Petite Diced Tomatoes w/Lime Juice & Cilantro or Red Gold Petite Tomatoes with Chipotle, drained very well.
1 egg, beaten
1/2 cup bread crumbs
salt & black pepper to taste
Preheat your grill to medium heat.
Combine the ground chicken, tomatoes, egg and bread crumbs in a bowl and mix.
Form into patties and season with salt and pepper.
Place onto the grill and cook until reaches 160 degrees F, for a completely cooked burger. Be sure to flip at least once, and don’t squish it into the grill, you want it moist and juicy, not dried out.
You can serve this with guacamole, avacado or roasted pineapple slices. Top it with mango chutney or fruit salsa.
You can also allow this to cool, chop it up and serve on a salad for a fabulous chicken salad for a great left overs meal!
