Simple Chicken Campfire Meal Recipe

We grill a lot during the summer.  And since we got a fire ring, we have started to have campfires so the kids could roast marshmallows.  But why not make dinner on it too?  So we started making campfire meals.

Meals need to be simple and easy and this chicken and veggies campfire meal was really good and took about 20 minutes to cook.

I will admit that you should probably not put the foil into the fire like we did, some of the food got charred. Keeping it above would give an even non-incinerating cooking temperature.

Ingredients:

4 chicken breasts, fillet
poultry seasoning
1 lb baby potatoes, halved
1/2 lb baby carrots
2 cobs of corn, cut in half
1 stick butter
olive oil
pepper
tin foil

cooking instructions:

Start your campfire and get it up to temperature.

Take each chicken breast and butterfly fillet them. lightly sprinkle poultry seasoning on both sides of each chicken breast.

In a bowl add the cut potatoes, carrots and lightly drizzle olive oil on them and mix. Add pepper to taste.

Make 4 large sheets of tin foil to put the food on, in 4 servings.

Place a chicken breast on each piece of tin foil.

Divide the potatoes and carrot evenly among the 4 portions.

Place a cob of corn on each piece of tin foil.

Divide the butter into 4 portions and place a portion in each tin foil.

Close the tin foil, closing the edges and sealing the food into the foil.

Place on to the campfire and allow to cook, moving around.

After 20 minutes, check the chicken to make sure when it’s poked, the juice runs clear and that the veggies and soft. If you have a temperature gauge, the chicken should be 165F.

Once cooked remove and enjoy.
