Easy Candied Pecans A.K.A. Cinnamon Sugar Pecans

Candied pecans are a simple and easy recipe you can make at home for less.  You don’t need  many ingredients, you just need a little time and you’ll have the perfect gift to give for the holidays.   We love giving them out for Christmas to teachers and the local delivery crew.

While you make this in the slow cooker.  It is not a slow cooker recipe you leave to cook on it’s own.  You have to stir them every 20-30 minutes.  So you need to make the candied nuts when you have time to be attentive to them or they will burn.

Once cooled and they are super delicious, it’s hard to stop eating.  You will need to hide them to keep from eating them all. And if you love these, you will love making candied almonds too.

What Ingredients Are Needed To Make Candied Pecans?

You just need:

  • raw pecans
  • brown sugar
  • white granulated sugar
  • cinnamon
  • water
  • egg whites
  • vanilla extract
  • sea salt

Can I Make A Double Batch Recipe?

Yes, but you will need to use an oval slow cooker, not a 4 quart to be able to hold the volume. You will want to stir more often and move the plastic bag around, to make sure no pecans are sticking and burning to the bottom.

How Do I Store And Keep The Candied Pecans Fresh?

You will need an airtight container to store and keep the pecans fresh after making. Opening and closing the bag and sneaking a few before you gift them, can cause them to go stale and you to have none to give.

How Long Does It Take To Make Candied Pecans?

Cooking the candied pecans on high it takes about 2 1/2 hours for them before they are done.

Once done in the slow cooker, the pecans are placed on a baking sheet lined with parchment paper to coo.

Why Are The Pecans All Wet?

This is part of the process. There is water used to mix everything. As it cooks down, the water will condensate on the top. This is also why the last 30 minutes the top is removed to help remove excess water. Placing on a baking sheet lined with parchment paper after cooking allows them to also cook and dry out.

Make another batch and try using cayenne pepper for a kick or add maple syrup for another layer of sweetness.

Ingredients

  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 3 Tablespoons cinnamon
  • 1/8 teaspoon sea salt
  • 2 egg whites
  • 1/4 cup water
  • 2 teaspoons vanilla
  • 4 cups halved raw pecans (no salt)

Instructions

  • Use at least a 4-quart slow cooker.
  • Use a slow cooker bag or spray the inside of the crock pot with cooking spray. Easy clean up is using the bag.
  • In a large bowl, mix the sugar, cinnamon, and salt.
  • In a separate bowl, whisk together the water, egg whites and vanilla.
  • Take the pecans and put them into the bowl with the egg white mix and stir together with a spatula, coating all the pecans well.
  • Stir until the pecans are coated thoroughly and appear wet/shiny.
  • Dump the nuts into the cinnamon sugar and coat thoroughly. Make sure all the nuts are coated in cinnamon and sugar.
  • Put the liner into the slow cooker.
  • Pour the coated pecans into the slow cooker. Even out the nuts and put the slow cooker on high.
  • You will cook this for 2 1/2 – 3 hours, stirring every 30 minutes to keep them from burning and sticking together in clumps.
  • You want the nuts crispy, but not blackened, so keep an eye on the color the nuts are.
  • About 30 minutes before they are done, remove the cover on the crock pot, so the condensation in the pot is removed from the nuts.
  • Remove the candied nuts from the slow cooker and place on the parchment or silicone mat. Allow to cool before placing in your containers or eating.
  • These nuts can be put in small airtight containers and give as Christmas gifts.
