Here is what you’ll need:
1/4 cup brown sugar
2 tablespoons kosher salt
2 tablespoons paprika
1 tablespoon ground black pepper
1 teaspoon thyme
2 teaspoons ground coriander
1 tablespoon dry mustard
2 teaspoons ground fennel seed
2 teaspoons garlic powder
3 pounds pork tenderloin
2- 15 ounce cans (or 1 – 28 ounce can) Red Gold Crushed Tomatoes
1- 14.5 ounce can Red Gold Diced Tomatoes drained
DO NOT roll the pork into the spice. There will be left over spices and if you roll the pork in the spices, you can’t use the left over spices later.
Place the pork in the the crock pot, fat side up (this will make it easier to remove when it is done, but still give flavor while cooking).
Remove the pork from the crock pot and shread with 2 forks. You can add pan juices into the pork or I added the pork back into the juices and mixed.
You can then make your sandwich on a warm hamburger bun and enjoy.
This can also be served without a bun.
A second meal for this would be to make it into a pork soup by adding corn.
